Pumpkin Tofu Bites

Fall is officially in the air, and I couldn’t resist bringing a bit of that cozy, fall-filled magic into my kitchen! Inspired by the comfort of tofu wings and the festive feel of the season, I decided to turn tofu into adorable Pumpkin Tofu Bites. These are crispy, savoury, and oh-so-satisfying, with the option to add a buffalo wing sauce if you’re craving a little extra warmth.


I don't know about you, but in my house, cookie cutters are hardly ever used for actual cookies. I’ve found so many creative ways to repurpose them, and they’ve become an essential tool for transforming everyday meals.

So, when I was thinking about making tofu wings, I glanced at my little pumpkin cookie cutter and thought, "Why not make them into pumpkins?" They’re perfect for giving tofu, sandwiches, pancakes—pretty much anything—a playful upgrade. It’s all about making food fun and festive, especially during the holidays.


Here’s the Pumpkin Tofu Bites recipe so you can try it for yourself:

 

Pumpkin Tofu Bites

Ingredients:

  • 1 block firm tofu

  • 1/2 cup cornstarch

  • 1/2 cup plant-based milk

  • 1 cup Panko breadcrumbs

  • 1-2 tbsp olive oil

  • Salt and pepper to taste

  • 1 tsp paprika

  • 1 tsp turmeric

  • Celery and carrots for serving


Optional Buffalo Wing Sauce:

  • 2 tbsp plant-based butter

  • 1/4 cup hot sauce

  • 2 tbsp BBQ sauce


Directions:

  1. Start by slicing your block of tofu into three slabs. Then, grab your pumpkin cookie cutter and cut out four pumpkin shapes from each slab. Set the tofu pumpkins aside.

  2. Get three bowls ready. In the first, put your cornstarch. In the second, pour the milk. In the third, mix the Panko breadcrumbs with olive oil, salt, pepper, paprika, and turmeric.

  3. Dunk each tofu pumpkin into the cornstarch, then into the milk, and finally into the Panko crumb mixture.

  4. Air fry the tofu pumpkins at 375°F for 20 minutes, (optional to flip them halfway through so they get that crispy goodness all over).

  5. If you like your wings with some spice, mix together the plant-based butter, hot sauce, and BBQ sauce on the stovetop. Toss the tofu pumpkins in this sauce right before serving.

  6. Pair your crispy pumpkin bites with celery, carrots, and your favourite dip, or drizzle the buffalo wing sauce.


 

Cookie cutters may have started out as tools for making sugary treats, but they’ve evolved into so much more in my kitchen. Whether it's turning tofu into cute pumpkin shapes or adding character to a simple sandwich, they’re a fun way to get creative and celebrate the season. So, next time you’re whipping up something savoury, grab that cookie cutter and give your meal a playful twist!
